Marinating The Beef

  • 500 g beef sirloin - thinly sliced against the grain
  • 1 tbsp chinese cooking wine - Shaoxing wine
  • 1 tbsp cornstarch
  • ½ tsp baking soda
  • 1 tbsp soy sauce
  • 1 tsp white vinegar
  • 1 tbsp oil - vegetable or coconut oil

The Sauce

  • cup light soy sauce
  • ½ tsp dark soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp ground white pepper
  • 2 tsp ground black pepper
  • 4 tbsp brown sugar
  • 1 tbsp chilli oil

For the stir-fry

  • sliced vegetables such as bell green and red peppers
  • 3 cloves garlic - minced
  • 1 tbsp ginger - minced
  • 1 onion - sliced
  • 3 whole dried chilli - optional
  • 1 tbsp cornstarch - mixed with water (optional)
  • 1 spring onion

Instructions

Step 1: Marinate the Beef

  • In a mixing bowl, combine the thinly sliced beef with soy sauce, Chinese cooking wine (Shaoxing wine), cornstarch, baking soda, and oil. Toss well to coat the beef evenly in the marinade. Allow the beef to marinate for at least 20 minutes.

Step 2: Prepare the Sauce

  • In a mixing bowl, combine brown sugar, light soy sauce, dark soy sauce, oyster sauce, ground white pepper powder, chili oil, white vinegar, and ground black pepper powder

Step 3: Prepare the Wok

  • Heat vegetable oil in a wok or large skillet over high heat until hot but not smoking.

Step 4: Stir-Fry the Beef

  • Toss onions, garlic, and ginger for a few seconds and push them to the side.
  • Add the marinated beef to the hot wok, spreading it out in a single layer. Allow it to sear without stirring for about 1-2 minutes to develop a nice brown crust.
  • Once the beef is browned, stir-fry continuously for another 2-3 minutes until cooked through and no longer pink. Add the vegetables, green and red bell peppers, to the wok and toss to soften to tender-crisp, but make sure they still have great color.
  • Add the sauce and toss till everything is well coated.
  • Add spring onions and whole dried chilli, give everything, and quick mix.
  • Adjust seasoning with additional soy sauce or salt if needed.

Step 5: Serve

  • Transfer the beef stir fry to a serving platter and garnish with sesame seeds or cilantro, if desired.
  • Serve hot with steamed rice or noodles.

  1. Customization: Feel free to customize the level of sweetness and spiciness according to your taste preferences. Start with smaller amounts of sweet and spicy ingredients, tasting as you go, and adjust accordingly.
