  • 2 cups cooked chicken breast - shredded
  • 1 bag mixed leafy lettuce greens - (of your choice)
  • 1 cup cherry tomatoes - halved
  • ½ cucumber - diced
  • ¼ red onion - finely chopped
  • ¼ cup feta cheese - crumbled
  • ¼ cup Kalamata olives - sliced
  • A handful of fresh strawberries or diced mango - halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

Step 1: Prepare Chicken and Vegetables

  • In a mixing bowl, combine mixed leafy lettuce greens, shredded chicken breast, cherry tomatoes, diced cucumber, chopped red onion, crumbled feta cheese, fresh strawberries or diced mango, and sliced Kalamata olives.

Step 2: Whisk Dressing

  • In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the dressing.

Step 3: Portion for Work
