  • cup coconut flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter - softened
  • ½ cup granulated erythritol or preferred keto sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat and Prepare

  • Preheat the oven to 325°F (163°C).
  • Line baking sheets with parchment paper.

Step 2: Combine Dry Ingredients

  • In a mixing bowl, whisk together almond flour, coconut flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt.

Step 3: Cream Butter and Sweetener

  • In a separate bowl, cream together softened butter and granulated erythritol until light and fluffy.

Step 4: Add Wet Ingredients

  • Beat in the egg and vanilla extract until well combined.

Step 5: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Step 6: Form Cookies

  • Use a cookie scoop or spoon to form small balls of dough.
